Summer is here and it's the time we all want to stay in cool temperatures but also healthy... so that we can hit the beach with confidence! Don't worry, because we've got you covered. Below you will find our 3 favorite, super refreshing summer salads that we have selected and we are sure you will love them as much as we do.
Potato salad with vegan dressing
It's not summer without a potato salad. Prepare it in advance, put it in the fridge, let it cool down nicely even at the end of a hot day.
Ingredients for the potato salad
5 potatoes
salt
1 Florina pepper, finely chopped
3-4 thinly sliced radishes
2 spring onions, finely chopped
¼ bunch of chopped parsley
Ingredients for the dressing
5 tbsp. Hellmann's Vegan Mayo
3 tbsp. olive oil
2 tbsp. apple cider vinegar
2 pickled cucumbers
1 tbsp. caper
1 clove of garlic
freshly ground pepper
Fruit salad with coconut-lime dressing & chia seeds
A cool fruit salad that will convince you to eat the fruits that you picked several days ago and will soon wilt. Use whatever fruits make you happy. But in the dressing, pay attention to the details.
Ingredients for the fruit salad
3 apricots, quartered
10-15 cherries
Watermelon, cut into small pieces
Melon, cut into small pieces
1 tbsp. chia seeds
whatever other fruit we have
Ingredients for the dressing
5 tbsp. vegetable coconut yogurt, sugar free
3 tbsp. coconut cream (optional)
juice & zest of 1 lime

3-4 mint leaves, chopped
The authentic Tabbouleh salad
Of course we included in our list the original tabbouleh salad, which is one of the healthiest cold-cooked salads! This particular recipe stands out for 2 reasons, it is very easy and super healthy!
Ingredients
• 80 ml extra virgin olive oil
• juice of 2 lemons
• 120 g fine oatmeal
• 120 ml of water
• 2 bunches of chopped parsley
• 2 ripe tomatoes
• 2 spring onions, finely chopped
• 1 small bunch of mint, chopped
• Salt and pepper
