1. Acai Bowl

Originating in Brazil, the acai bowl is made of frozen acai palm fruit that is pureed and served as a smoothie in a bowl.

Ingredients

For the Acai smoothie:
- Unsweetened Acai Puree or Powder
- Frozen blueberries
-Frozen banana
-Your favorite plant-based milk

Toppings:
-Granola
-Banana
-Coconut flakes
-Maple syrup

Health fact: Acai is labeled a “superfruit” because it is nutrient dense, packed with antioxidants, vitamins, minerals fiber, amino acids, and heart-healthy fats. Unlike many fruits that are high in sugar and low in fat, the acai berry is actually somewhat higher in fat and low in sugar. Some claim acai contains more antioxidants than any known edible fruit in the world. This explains why Brazilians call Acai the “Beauty Berry”.

2. Quinoa Bowl

Ingredients:
-½ cup cooked quinoa
- 1 cup sweet potato
- ½ cup beets
-1 cup broccoli florets
- ½ cup chickpeas
- ¼ avocado
- 2 tbsp hummous
- salad dressing, salt & pepper

You can steam, boil or roast your veggies. Preferably roast the chickpeas with paprika, turmeric, salt and pepper. Add spices and herbs to your liking

3. Vegan Poke Bowl

You’ve probably already seen Poke bowls on social media or overheard the buzz. They have actually been a staple in Hawaiian cuisine for centuries. Poke means "cut into pieces" and refers to the slices or cubes of raw fish that are served in a bowl along with rice, dressing, vegetables and seasonings. Native Hawaiian fishermen would slice up small fish or trimmings of tuna or octopus and serve them raw, seasoning it with what they have, typically salt, seaweed, limu, and onions. In Hawaii, poke is available almost everywhere – from grocers, restaurants and even corner shops.

- Rice (sushi, jasmine or wild)
- Crispy tofu or tempeh
-Cucumber
-Radish
- Purple Cabbage
-Edamame beans
-Carrots
-Sesame seeds
- Your favorite dressing

Tofu marinade: soy sauce, chili, garlic, ginger, honey or agave syrup
