MATERIALS

1/4 cup fresh lemon juice
3 tablespoons of olive oil
1 kg Brussels sprouts, trimmed and very thinly sliced
1 small lettuce
1/3 cup grated ricotta or pecorino cheese
2/3 c. dried cranberries
1/2 cup almonds, chopped

1 cup wild mushrooms, sliced
1/4 cup olive oil
2 cloves garlic, melted

2 cups cooked lentils
1 spoonful of chopped parsley

1 kg chicken breast cut into small pieces
1/2 cup red kidney beans (you can skip the chicken, for a vegan version)
1 teaspoon garlic salt
¼ teaspoon ginger
2 cups carrot cut into small pieces
1 tablespoon of lemon juice
⅓ cup soy sauce
2 cups kale, cut into small pieces
2 avocados in pieces
6-8 lettuce leaves, on which to serve the mixture
